La Parenthèse Végétale is a little workshop tucked down a small road in the 20th arrondissement, and has recently celebrated its 2nd birthday. Run by “Madame Pigut” 😉 the classes all use organic and vegan ingredients.
The class I attended was Tartes et Quiches Végannes, others include vegan cheesemaking, how to jazz up winter veggies, and even Indian-inspired cuisine. At the end of the 2/3 hour atelier, the group sits down together and snaffles everything they’ve just lovingly made, hence my photos taken hastily before tarts were munched.
Conclusion: veganism is absolutely doable, not ideal for going to restaurants though, and now I know how to make vegan pastry (super super easy by the way…).
